Maple Dill Carrots


When I need an easy vegetable side dish, I generally go green (asparagus, broccoli, green beans, Brussels sprouts).  I so often forget the humble carrot which I love, raw or cooked.

I had some fresh dill on hand I wanted to use and ran across this recipe.  So simple, easy, and healthy.

MAPLE DILL CARROTS (4 servings)

3 cups peeled and sliced carrots
2 Tbsp butter
2 Tbsp brown sugar
1 1/2 Tbsp chopped fresh dill
1/2 tsp salt
1/2 tsp black pepper

Place carrots in a skillet and pour in just enough water to cover.  Bring to a boil over medium heat; simmer until water has evaporated and the carrots are tender.  Stir in butter, brown sugar, dill, S&P.
